- This exceptional Sidra comes from Jardines del Edén, a renowned experimental farm managed by Cofinet "Felipe Arcila" in Quindío, Colombia. The coffee is harvested with strict ripeness standards—only fully mature cherries are selected, floated, and hand-sorted to remove any defects.
- Cherries are then fermented underwater for 30 hours to develop complexity and clarity. After pulping and gentle washing, the parchment is dried slowly over 192 hours in temperature-controlled conditions (12–28 °C), ensuring ideal moisture and flavor development.
- Sidra is a unique hybrid of Bourbon and Typica, originally from Ecuador. Known for its floral fragrance, juicy acidity, and refined sweetness, it also offers good resilience to leaf rust and drought, though it’s sensitive to pests.
- We first tasted Sidra in 2017 and were instantly captivated. Its elegance and vibrancy have made it one of our all-time favorites.
