- This particular coffee was cultivated by Johan Vergara on his farm, Las Flores, located in the small village of San Isidro in Pitalito, Huila. Johan comes from a family with a long history of coffee production, having started planting coffee in 1990. Presently, he manages the farm along with his family and has introduced unique varieties such as Pink Bourbon, Tabi, Wush-Wush, and the Sidra beans used for this coffee.
- The processing of these beans involves several stages. Initially, the entire cherry undergoes a dry aerobic fermentation for 24 hours. Subsequently, it is transferred to Grainpro bags and stored for 90 hours at an average temperature of 22ºC. Afterward, the beans are pulped, washed, and then dried.
About the Producer
- Located in the village of San Isidro, Acevedo in the Huila department, Finca Las Flores is a 14.5-hectare farm that was established by the Ayure family in 1990. Initially, they started with 18,000 coffee trees and gradually expanded their plantation to 90,000 trees. Participating in the Cup of Excellence in 2006 proved to be a significant milestone for Finca Las Flores, as it opened doors for them to enter the world of specialty and unique coffees.
- Over the years, the Ayure family dedicated their efforts to testing and learning about the different coffee profiles and finding ways to enhance them. With the assistance of their son Johan, they began making adjustments to their production methods and improving post-harvest processing.
- As a result, Finca Las Flores is now known for their exceptional coffee varieties, including Pink Bourbon, Tabi, Java, and Maracaturra. Furthermore, they have implemented fermentation techniques for exotic varieties like Wush Wush and Bourbon Citron.
